Recipe – Low Fat Chili!!!

chiliWhat is a family to do when something you love is also considered bad for you?  Make a few adjustments to make it healthier and enjoy it more often!  See below for our Turkey Chili Recipe.  A lower fat version that keeps all of the flavor!

2-3 Tablespoons Olive Oil

1 Pkg Dillon’s Brand Mirepaux

Salt and Pepper to taste

2 Tablespoons minced Garlic

3 lbs Ground Turkey

3 Pkgs Chili Seasoning (Mild or Spicy)

3 Cans Kidney Beans (2 dark and 1 light or whatever you want!)

2 Cans of Tomato Sauce (14 to 16 oz each)

In a large non stick skillet, heat olive oil on medium to medium high heat.  Add Mirepaux, salt and pepper.  Stir or toss 5-7 minutes till the Mirepaux is soft.  Add Garlic.  Toss/Stir another minute or two.  Add ground turkey.  Stir/toss until the turkey is cooked, chopping turkey up as you go.  Add chili seasoning per directions on the packet.  When all is mixed well, pour into large crock pot or stew pot.  Add beans and tomato sauce.  Mix well.  Let simmer on low heat for 2 hours, stirring occasionally.

Serve with crackers, or on top of a baked potato, or over spaghetti noodles.

Variations of the above—

Add a 1/2 cup of peanut butter with beans and tomato sauce to give the chili a smokey/nutty flavor note.

Use 1 lb of turkey sausage in place of 1 lb of ground turkey for more flavor.
