Oatmeal Cake

Kate’s Oatmeal Cake

1 1/3 cups boiling water

1 cup oatmeal

Pour water over oats – set aside – let stand

In small mixing bowl, CREAM together:

½ cup softened butter

1 cup brown sugar

1 cup sugar

2 tsp vanilla


2 beaten eggs

In large mixing bowl, blend together:

1 1/3 cups flour

½ tsp cinnamon

½ tsp salt

2 tsp baking powder

Add creamed mixture and stir well.  And the oatmeal/water mixture and stir well.  Pour into greased 13x9x2 cake pan.

BAKE at 350 for 30 minutes

While cake is baking – mix the topping:

10 Tbls melted butter

1 cup brown sugar

½ cup milnot or evaporated milk

2 tsp vanilla

3 cups coconut

Mix all topping ingredients in medium saucepan and heat until melted and smooth.  Bring to a gentle boil and continue boiling and stirring for 2 minutes.  Pour over baked cake and bake for an additional 30 minutes or until topping is uniform and evenly browned.
